Fresh Eggs - Juevos de Patio

We lived in Panama for two years, out in the country side where life still goes on without electricity and cars. My neighbor ladies would tell me that I shouldn't buy my eggs in town. Those eggs were old and the yolks were sad. They would bring me one or two eggs at a time from their hens; their pollo de patio.

These chickens had free range of the yard and produced the most beautiful eggs. They had bright, high sitting yolks of a deep marigold yellow; completely different than the store bought eggs. If I didn't wash them they would last weeks sitting on the counter; unless of course the cat got to them.

Somehow our terrible jungle cat discovered he could knock the egg box off the shelf and lap up the gooey rewards. If he was around when I was cooking I'd put the shells down for him to lick before tossing them into the compost.

These days, in Indiana, he distains any offer of eggshells. Even the roadside stand's eggs are not good enough for him. Our cat is right. The eggs from our Panamanian neighbor ladies were just better.

  1. I'm tellin' you! I still marvel at how gorgeous our girls' eggs are. Especially miss Queen Soot: she's number one and her eggs are chock full of all the protein and goodies she gobbles up first. So orange! Plus they rise better, and taste amazing of course. You should trade in your jungle cat for some patio hens.

  4. Our neighbor shared some eggs with us a while back and they were the most delicious eggs I've ever tasted. Isn't it great to have nice neighbors? I wonder if my dog would enjoy licking the egg shells. :)

  9. What a smart kitty! I'm on my way to the farmer's market this morning. There's a vendor who sells the most amazing eggs just like you describe. Can't wait to use them for breakfast tomorrow.

  12. You're inspiring me to get chickens again! We had them 20 years ago. This time I'd need to build a coop (for at night), not just a cage. Oh, but those eggs were good.
    First I have to get my husband to make a BSF bucket composter. The resulting grubs make awesome chicken feed, from what I hear. But I guess that sounds gross. I wonder what THOSE eggs would taste like?

  15. I have noticed the difference between fresh eggs and the normal ones from Costco or the supermarket. The yolks are brighter orange and the taste is incredible. During the summer I buy them from local farms. They are so much better. Your egg picture is amazing.

  16. We've been buying eggs through a friend of ours who has connections in the Amish community. They're the freshest I've been able to find -- and they have those gorgeous marigold-colored yolks. The flavor is also unbeatable. Always so impressed by the difference fresh, quality foods make... and (remarkably) they're often the least expensive!

    Funny just this morning, i put all my eggs in a big pot of water to see if their still fresh. no floaters ..all still good. Nothing beats the super fresh eggs you get from nice neighbors ;)

  19. I just ordered 15 more chickens, lol! 3 will join my laying flock and the others will be our broilers. There is nothing like fresh eggs :D Foy, I love your new photo! I've got to tell you, when I saw it on facebook, I wasn't sure that was you or a celebrity look alike picture. I love the haircut! Hmmm... maybe it's time for a new do for me ;)
